Braised Shoulder of lamb in white wine and garlic with baby turnips. - Beef Bourguignon with local beef and our own home made free range streaky bacon. - Normandy style Pheasant cooked in a Pembrokeshire cider sauce with a dash of cream. (winter only) - Gratin of White Asparagus - White asparagus baked in a creamy sauce flavoured with dijon mustard and parmesan topped with crispy breadcrumbs. - Dauphinoise Potatoes - Roasted seasonal vegetables with garlic and olive oil.
Seafood Paella - Braised Lamb Shoulder in Merguez Spice Rub. - Chicken and Chorizo Paella. - Seabass Ceviche, thinly sliced raw seabas with fresh lime cure. - Portuguese
Portuguese Chicken (Piri Piri). Marinaded in paprika, lemon juice, garlic, oregano and a little whiskey. Served as piles of freshly roasted jointed chicken pieces with caramelised lemon halves. - Salt Cod with Chickpeas. - Salt Cod Tortilla - Migas - toasted croutons with pine nuts and wilted greens. - Algarve Green Salad of tomatoes, red onion, cucumber, olives and fresh coriander. - New potatoes in salsa verde - Avocado, pink grapefruit and coriander salad. - Cubed garlic, paprika and rosemary potatoes roasted in olive oil.
Tuscan style Pheasant cooked in chianti and herbs with parmesan polenta (winter only). - Stracotto - Tuscan beef stew cooked in chianti with herbs and garlic - Aubergine Parmigiana - Pembrokeshire Crab Linguine (spider crab or brown crab). - Courgette and Cannellini Bean Lasagne - Kale and Mushroom Lasagne - Italian Porchetta - boned free range pork belly with attached loin stuffed with herbs and garlic then rolled, tied and roasted.
